Portfolio Making and a Prawn Curry

I’m still in the fresh-out-of-college mood. It still hasn’t set in that I should probably start putting my portfolio together. All I did since last week was randomly scan all the original pieces. I’m pathetically lazy. And its not something I’m not aware of.
Anyway, after a sumptuous, prawn curry and rice lunch, I literally dragged myself out of the bed (yes, of late, the bed has been my most-desired destination after lunch…fattening, I know), grabbed the camera and shot a few pages from the Synesthesia Magazine. Oh, I’m proud of my first magazine. Its something I should have done (and blogged about) a LONG time back (read: two months back).
Does prawn make you sleepy?

What You Need:
- I used about 500gms of medium-sized Prawns
- 6 cloves of garlic, crushed
- 1 tablespoon of grated ginger
- 1 teaspoon of turmeric powder (yes, this is typically Indian!)
- 1 dry bay leaf
- 1 teaspoon of red chili powder
- 2 green chilies, chopped
- Half a cup of chopped red onions
- 3 medium-sized potatoes, diced in quarters
- 1 tablespoon of lemon juice (lime would do too)
- salt and pepper to taste
- freshly chopped coriander (cilantro) to garnish
How-To:
- Heat oil in a pan (about a quarter cup)
- Add onions, bay leaf, garlic and ginger, till the onions start to turn golden-brown.
- Add the turmeric powder, chili powder, chopped green chilies, lemon juice and stir well for about a minute, till the spices are cooked thoroughly.
- Add the potatoes and prawns (clean the crustaceans…get rid of the veins, but keep the shells on). Stir well to coat the prawns.
- Add salt and pepper to taste.
- Pour in 2 cups of water. Cover and braise on low heat for about 45 minutes. The potatoes should be done by then.
- Uncover and boil off most of the liquid.
- Serve hot with rice.
Have fun and I really don’t need to remind you, that tweaking these recipes yield better results at times!

Thanks for the comment. I would love to exchange links and perhaps some really good Indian recipes. I’m a huge fan of dal but I’ve never gotten around to making any.
